Divine Coco-Cacao Bliss Balls

This week I’ll be hosting a silent meditation retreat, so we will be offline from tomorrow until next Monday (social media is not Alistair’s thing).

Before I go I thought I’d share this recipe that I actually just used to make some bliss balls as an afternoon pick me for the retreat participants 😊.

Mum and dad also always have a variation of these on the go for energising snacks and after dinner treats… maybe another time I’ll post Dads recipe which he has evolved over time.

Ingredients:
- about 100g Soma Cacao
- 8 medjool dates
- 1/2 cup shredded coconut (plus extra for rolling)
- 1/3 cup coconut oil
- 1 1/2 tablespoons chia seeds
- 1/4 cup coconut sugar (or more for sweeter)
- a little cinnamon
- 1/2 teaspoon vanilla bean paste

Method:
1. Soak dates in a small bowl for an hour or so.
2. Melt cacao using double boiler method (see my previous avocado cacao mousse recipe for more details) or in small increments in the microwave.
3. Combine all ingredients in a large mixing bowl thoroughly. The texture should be quite moist, but not too sticky or runny. Add more coconut flour if too wet, and more coconut oil if too dry.
4. Place extra coconut in a shallow dish or tray. Roll mixture into small balls (about a tablespoons per bowl) and roll into the coconut to coat.
5. Let them set in the fridge until firm. Can also be frozen.

And voila! Super easy.

Note: if you don’t have any Soma Cacao (and we are out at the moment so we can’t blame you for this!) you can sub in some good quality cacao powder, but you will need to add more coconut oil (and it won’t be quite as divine!)
